Delightful Salad Dressing

Ingredients:


6 large egg yolks

2 tablespoons sugar

1/2 Cup buttermilk

1 1/2 teaspoon butter -- melted

1/2 Cup vinegar

1/2 teaspoon dry mustard

1/4 teaspoon red pepper

1 Dash salt
 

Preparation / Directions:


Beat egg yolks at medium speed of electric mixer until thick and lemon colored. Add sugar, beating mixture well. Stir in buttermilk and melted butter. While beating at medium speed of electric mixer, slowly add vinegar to egg yolk mixture. Stir in the mustard, pepper, and salt. Pour mixture into top of a double boiler. Bring water to a boil (water in bottom of double boiler should not touch top pan). Reduce heat to low; cook, stirring constantly, 8 to 10 minutes or until smooth and thickened. Immediately remove from heat. Chill thoroughly. Serve over fruit or salad greens.
